But:
If you are lucky, you will not hit a tree or some poor guy in a car that doesn't know you are doing this.
If you are really, really lucky, you will not hit any power lines crossing the road.

In Europe or North America, you would get in troubles -
Where I live, Argentina - I have done it a few times -
Sometimes in the Pampa, a gas station is the only structure 100 km around -
And my airplanes (L-21B) operate on mogas (automobile gasoline) -
In Argentina - in the country, you land anywhere -
On the roads (watch for power lines and phone lines) -
Traffic being extremely light, a car or two passing by every hour -
Or in pastures - be careful with the cows -
Most "estancias" have a small grassy field to permit landings -
If it's long enough and straight enough. The Interstate highway system in the US was designed ala` the autobahn in Germany where every so often there was a one mile straight stretch designed to be used as a forward airfield.
And you would be in serious trouble unless it was an emergency.
You will get into a lot of trouble. You can try taking off in a open farm where not witness are around.
I always thought if you could take-off a boeing 707 on a highway with no cars when I was a kid. Turns out that you can't because no highway in the US is wide enough for a 707.
In the US it is a matter of state, county or city law. there is no universal law, but it is usually illegal. It is definitely not legal to take off from a Federal highway though. In an emergency, you can land anywhere, however.
I live on the prairies and a few farmers around here with aircraft have been landing and taking off from the grid roads because their landing strips are currently flooded.
To date no one has said anything about this practise.
